Here’s how you can make Tori Ke Chilke ki Sabji:
Wash and peel the ridge gourd peels. In a pressure cooker, add the peels and water. Close the lid and cook for 3-4 whistles. Once the pressure is released, squeeze out the excess water from the peels and set them aside.
Heat oil in a kadai or pan. Add finely chopped onions and sauté them for about 4-5 minutes until they turn soft and translucent.
Add salt, red chili powder, turmeric powder, and ginger-garlic paste to the onions. Mix well and cook for a minute.
Add the ridge gourd peels to the pan and mix them with the spices. Cook for about 8-10 minutes on low heat, stirring occasionally.
Finally, add chopped green chilies and cook for another 2 minutes.
Tori Ke Chilke ki Sabji is now ready to be served!
