Gawar Ki Sabji
Gawar Ki Sabji is a simple and nutritious dry vegetable dish made with cluster beans. It is popular in various regions of India and can be prepared with minimal spices.
Here’s how you can make Gawar Ki Sabji:
Wash and cut the cluster beans (gawar) into small pieces.
Heat oil in a pressure cooker or pan and sauté the chopped onions until they turn soft.
Once the onions are soft, add chopped tomatoes, red chili powder, turmeric powder, salt, ginger-garlic paste, and coriander powder. Mix well and cook until the tomatoes are soft and the spices are well roasted.
Add the cluster beans and potatoes (cut into cubes) to the cooker or pan. Mix them with the spices.
Add a little water and pressure cook for 2 whistles or cook covered on low heat until the vegetables are cooked and tender. Alternatively, you can cook it in an open pan by adding a little more water and covering it with a lid.
Once the cluster beans and potatoes are cooked, remove the lid and cook on high heat for a few minutes until any remaining water evaporates and the sabji becomes dry.
Gawar Ki Sabji is now ready to be served!

- 250 grams cluster beans (gawar)
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 1 potato, cubed
- 1/2 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon ginger-garlic paste
- Salt to taste
- Oil
