Anda Masala is a popular Indian dish made with boiled eggs, onions, and a blend of spices. It is a quick and easy recipe that can be prepared using basic pantry ingredients.

Here’s how you can make Anda Masala:

Boil the eggs and potatoes. Once boiled, peel the eggs and potatoes and set them aside.

Heat a little oil in a pan and fry the chopped onions and cashews until they turn soft and golden.

Allow the fried onions and cashews to cool down, then grind them along with coriander leaves, mint leaves, green chilies, and tomatoes to form a smooth paste.

In the same pan, heat some oil and add cumin seeds. Once the cumin seeds crackle, add the green paste mixture and sauté for a few minutes.

Add salt, turmeric powder, red chili powder, coriander powder, garam masala, and a little water to the pan. Mix well and cook the masala until the oil starts to separate. Mash the boiled potatoes and add them to the masala. Mix well to combine the potatoes with the masala. Add a little water and the raw egg to the pan. Stir continuously to mix the egg with the masala.

Cut the boiled eggs into quarters and add them to the pan. Gently stir the eggs with the masala to coat them evenly.

Cook the Anda Masala on low heat for a few minutes until the flavors are well blended and the dish has thickened slightly.

Anda Masala Ingredients:

  • 5 boiled eggs
  • 1 raw egg
  • 1 small potato or 1/2 large potato, boiled and mashed
  • Salt to taste
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon Maggi masala or any preferred egg masala
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon oil
  • 1 small bowl of mint leaves (pudina)
  • 1 small bowl of coriander leaves (dhania)
  • 4-5 green chilies
  • 1/2 lemon
  • 100 grams yogurt (curd)
  • 7-8 cashews
  • 1 large onion, chopped
  • 1 tomato

Adjust the spice quantities according to your taste preference. Serve Anda Masala hot with roti, paratha, or rice for a delicious meal.
