Baigan ka Bharta is made by mashing roasted brinjals, which gives a pleasant aroma. Due to its aroma and taste, it has become everyone’s favorite. Big brinjals are used in this recipe. It is not good in small brinjals. It is very easy to make Bharta, Baigan ka Bharta. This tasty dish is made by mixing onion, tomato and spices.

Wash the brinjal and make a slit in the middle. Peel the brinjal and keep it inside the brinjal. Make cuts at several places in the brinjal and place 10 to 12 peeled garlic jaws on it and apply mustard oil on the brinjal (if mustard oil is not available then use any other method). Also apply refined oil. By doing this the peel gets removed easily after roasting the brinjal.

Now roast the brinjal on a net (if there is no net, then roast it on gas, roast the brinjal thoroughly from all sides. When it cools down, peel the brinjal (do not cool the brinjal by putting it in water, otherwise it will taste bad) It will not be good) Take out the garlic from the brinjal and separate it.

Mash well with potato masher. Heat mustard oil in a pan and cool it for a few minutes (by doing this the oil will not smell). If you want, you can also take refined oil. Now add finely chopped green chillies, cumin and asafoetida in the hot oil. After 1 minute, fry finely. Add chopped onion, roasted garlic along with brinjal and grated ginger. When the onion becomes soft, add chopped tomatoes.

 

 

 

 

 

Add turmeric, salt, red chilli powder, coriander powder, cumin powder, garam masala powder and mix all these spices. If necessary add some water and cook till the tomatoes melt. Now add the Maggi masala and brinjal and cook for 4 to 5 minutes. Cook on low flame, add green coriander at the end and serve.

  • Brinjal 400 grams

  • 3 to 4 finely chopped green chillies
  • Asafoetida 1/4 tsp
  • cumin 1/2 tsp
  • Red chilli powder 1/2 tsp
  • Coriander Powder 11 tsp
  • salt as per taste
  • turmeric 1/4 tsp
  • Garam Masala 1/4 Garam Masala
  • Cumin powder 1/2 tsp
  • Meggie Masala 1 tsp

  • Ginger 1 inch
  • mustard oil
