Chicken Changezi

Chicken Changezi is a special dish of chicken. This novel dish is very enjoyable to eat. This is a wonderful Indian dish which is known by its interesting name. In Chicken Changezi, chicken pieces are cooked in spicy gravy and spices are cooked separately and the spicy chicken is added to it. The aroma and taste of this dish is enough to make the mouth water. This is a Mughlai dish and is very famous. Chicken Changezi is easy to make. In it, things like milk, cream and cashew nuts are used, due to which this royal dish is made on feasts and special occasions.

Its history is linked to the Delhi Sultanate period, when it was built by the Mughal rulers. The combination of its aroma and taste will make you want to eat it again. Chicken Changezi is a unique version of Indian food which is especially delicious with spicy and juicy gravy.

Clean the chicken, wash it thoroughly, add salt, ginger garlic paste, Kashmiri red chilli powder, red chilli powder, curd, lemon, mix them all well and keep them in the fridge for some time . If you don’t have time, you want to make it quickly. You can also make it immediately by mixing spices. Take 2 tbsp of oil in a pan and put the chicken pieces one by one. Do not put the whole chicken at once. Now some gravy will be left in the bowl, we will use it later.

While stirring on full flame, drain the water from the chicken, cook the chicken till 50 to 60% and turn off the gas.

 

 

 

 

Heat some oil in a pan or frying pan and fry the chopped onions until they become light brown (not dark brown). Now add cashew nuts to the onion and fry it, once it cools down make a paste.

 

 

 

To make gravy, add ginger garlic paste to the remaining oil of onion and cashew nuts (if oil is less then add some more oil) and fry for 2 to 3 minutes. Now add ground tomato paste, coriander powder, garam masala powder, fry. Add cumin powder, chaat masala powder and fry for 7 to 8 minutes, add remaining masala of chicken marinate, onion cashew paste, kasoori fenugreek (roast on low flame on pan and mash with hands) and fry on low flame till oil starts appearing. Add half cup milk and chicken, taste the salt and add it if it is less.

Thaw the chicken thoroughly and if necessary add some water, cover and cook for some time and check the chicken after 5 to 6 minutes.

If the color of the gravy seems dull then add some Kashmiri red chilli and let it fry on low flame. Now add fresh cream or milk cream and green chilli cut from the middle and cook for 2 to 3 minutes more. When Chicken Changezi  is ready, add green coriander and serve.

Chicken Changezi Ingredient –

For chicken marinade 

  • Chicken 1 kg
  • salt as per taste
  • curd 250 grams
  • Ginger garlic paste 3 tsp 3 tsp
  • lemon 1
  • Red chilli powder 1 tsp or (as per taste)
  • Kashmiri red chilli powder 2 tsp

For gravy –

  • 3 onions and 16 to 17 fried cashew nuts (paste made)
  • Ginger garlic paste 2 tsp
  • Tomato 2 (paste)
  • coriander powder 1 tsp
  • garam masala 1 tsp
  • roasted cumin powder
  • Chaat masala 1 tsp
  • Kasoori Methi 1 tsp (roasted)
  • milk half cup
  • Malai or cream 5 to 6 teaspoons
  • Green chilli 3 to 4
  • green coriander
