Qureshi Kabab
Famous Qureshi Kabab of Old Delhi: People come from far and wide to eat these kebabs, or rather, the taste of these kebabs attracts people here. Make Qureshi kebab at home without coal furnace.
Let’s see Qureshi Kabab recipe –
Grind the mince finely in a mixer and keep the fat in the mince up to 15%. Mint, green coriander, ginger garlic paste, lemon juice, green chilli paste, great onion (grated pumpkin, drained), red chilli powder, salt, black pepper powder, roasted cumin, chaat fruit masala, Mix coriander powder, garam masala and desi ghee well in the minced meat.
Keep making kebabs on skewers with a little water on hand. Shallow fry the kebabs in a pan or pan and take them out from the pan after they are cooked from all sides.
Make chutney by grinding coriander, mint and green chillies. Add chaat masala and ground green chutney to curd and cream (mix chutney as per your taste).
In a serving tray, add cream, curd and chutney to the kebabs and add melted butter on top (you can add more or less butter as per your choice).
Serve with chopped onion and green coriander.
Qureshi Kabab
- Mutton Keema 500 grams (with 15% fat)
- Onion drained (crushed) 1 big
- Green chilli ground 1 tsp
- Green coriander and mint half cup
- salt as per taste
- Coriander powder half teaspoon
- half teaspoon roasted cumin seeds
- Chaat fruit masala half teaspoon
- Red chilli powder half teaspoon
- juice of half a lemon
- Ginger garlic paste 2 tsp
- black pepper powder half teaspoon
- garam masala half tsp
- Desi Ghee 2 tsp
For gravy –
- curd half cup
- Half a cup of cream
- Chaat fruit masala half teaspoon
- Butter
For chutney –
- Mint 20 to 25 mint leaves
- Half cup green coriander
- Green chillies 2 to 3 green chillies
