Gujrati Kadhi Khichdi
A popular dish of Gujarat is Gujrati Kadhi Khichdi. This food is eaten with great enthusiasm all over India. Tasty Kadhi is made by mixing curd and gram flour. You must have eaten Kadhi many times but once you try this Gujrati. Try Kadhi, it is easy to make and is also very tasty to eat. Gujarati thali is incomplete without this Kadhi. If dry potato curry is made with this recipe, the taste increases further.

To make curry –
Grind pearl green chillies, salt, green coriander, curry leaves, ginger and garlic in a mixer grinder . Take a tablespoon of oil in a bowl and add cumin seeds and curry leaves.
When the cumin and curry leaves crackle, add the ground masala and fry for 7 to 8 minutes. Take half a cup of water in a small bowl, mix 3 teaspoons of gram flour and make a paste. Add buttermilk and also add the gram flour paste and stir. So that there are no lumps, turn off the gas once it starts boiling. Put green coriander on top.
To make Khichdi –
Soak the toor dal half an hour in advance. Soak the rice also an hour in advance. When some oil is heated, add cumin seeds. When the cumin seeds crackle, add water, turmeric, salt and toor dal. When it boils, reduce the flame of the gas. 4 After cooking for 5 minutes, add rice.
Pour water over the rice and when 20% water remains, let it simmer for 10 minutes.

- buttermilk 1 kg
- Green chillies 5 to 6 (thick)
- green coriander
- curry leaves
- ginger one inch piece
- Garlic 10 to 2 cloves
- salt as per taste
- cumin 1/2 tsp
- Gram flour 3 teaspoons
