Hyderabadi Chicken Biryani

In the cooker , add onion, tomato, curd, ginger garlic paste, salt, turmeric, red chilli powder, cumin, coriander powder and one spoon oil, all these spices, add one spoon water and whistle, after one whistle Cook on low flame for 7 to 8 minutes.

 

 

 

When the gas from the cooker goes out, fry the spices well. Once the onions and tomatoes melt, add the chicken, biryani masala (Everest’s royal biryani masala) and crushed fried onions (finely chop the onions in a slicer). When the oil is hot in a pan or bowl , Add onions and fry till they turn brown, keep stirring continuously, do not let them turn dark brown, take out the onions and keep them in the fridge.

By doing this, the onions become crispy. If the onion is not crispy then grind it in a mixer grinder. Add it and mix it. When the chicken melts, add finely chopped mint. Dry the water of the masala thoroughly, that is, make the masala thick.

 

 

 

Heat one spoon of oil in a bowl and add cumin seeds. When the cumin seeds crackle, add water and add rice. Keep the water covered with rice and cook on full flame. When 30% water remains, keep the rice on simmer for 10 minutes. In a big bowl, add 30% boiled rice , add all the spices on top and spread it. Now add the remaining 60% rice and spread it. Add lemon yellow color to 10% of the rice, mix and set aside. When serving biryani, keep adding this rice also in small quantities.

 

 

 

Or spread the remaining 70% rice over the spices and add lemon yellow color to half a small cup of water and pour it on top. Now take oil in a fry pan and brown the onion, add long chopped green chillies and this tadka. Pour over rice. Tasty Hyderabadi Chicken Biryani  is ready.

Ingredient –

  • rice 1 kg
  • Chicken 1 kg
  • Onion 1 kg (500 grams fried – 500 grams chopped)
  • Tomato 300 grams
  • coriander powder 5 tsp
  • biryani masala 5 tsp
  • Ginger garlic paste 3 tsp
  • salt as per taste
  • Red chilli powder 1 tsp
  • turmeric 1/4 tsp
  • curd 500 grams
  • cumin 1/2 tsp
  • half onion for seasoning
  • Mint
  • green coriander
  • Oil
