Wash okra, clean it and cut it into big pieces or cut one big okra into 2 pieces and make an incision from the middle, chop one onion finely and cut the other onion into big pieces.
When the oil is hot in a pan, fry the bhindi and take it out when it becomes soft.
Fry the onion in the same oil for 1 minute and take it out, now reduce the oil of the pan and put cumin seeds in some oil in the pan.
After adding cumin, fry the finely chopped onion till it becomes light brown and add 8 to 10 cashew paste (keep the cashew paste slightly thick) and fry for 2 minutes, then add ginger garlic paste.
Beat curd in a bowl, add roasted crushed cumin, coriander powder, garam masala, make a paste and roast it in a pan, add some water if needed, let it roast for 8 to 10 minutes. Now add red chili powder, salt and turmeric. After roasting well, add fried okra and fried onions, cover and cook on low flame for 3 to 4 minutes, add kasoori fenugreek and serve after adding green coriander.

- Bhindi 500 grams
- Onion 2 large (1 finely chopped + 1 thickly chopped)
- Curd 150 grams
- Coriander powder 2 tsp
- Red chili powder 1 tsp
- salt as per taste
- turmeric ¼ tsp
- Crushed roasted cumin ½ tsp
- Garam masala ½ tsp
- Kasoori Methi 1 tsp
- Ginger garlic paste 2 tsp
- Cashew 8 to 10 cashew paste
