Grind the chicken into small pieces and mix ginger-garlic paste, salt, ground black pepper, chaat fruit masala, garam masala, red chilli powder, food colour (red orange), lemon juice, ground cumin and curd (remove the water from the curd) thoroughly.

 

 

 

Put the marinated chicken in one tablespoon oil in a pan and cook on full flame while stirring it. Do not add water. Curd and chicken release their water. When all the water dries up, make a bowl of aluminium foil or burn coal in a steel bowl. Put 2 to 3 drops of Desi Ghee or oil on it and cover it with a lid so that the smoke of the coal reaches the chicken.

 

 

 

Now finely chop onion, green chilli, green coriander and mint and mix it with the chicken.

 

 

 

Put one to one and a half teaspoon of mixed chicken on the samosa strip, fold one corner, then fold the folded corner again. In the same way, make the samosa by folding one corner to the other. Finally apply flour slurry (mix 2 teaspoons of water in 1 teaspoon) and stick the last corner.

 

 

 

When the oil is medium hot, add the samosas one by one in it. Once fried from both the sides, take them out and serve with sauce.

Ingredients –

  • Chicken 300 gms
  • Red chilli powder 1/2 tsp
  • Salt to taste
  • Garam masala 1/2 tsp
  • Chaat fruit masala 1/2 tsp
  • Ginger garlic paste 1 tablespoon
  • Food colour (red orange) 1/4 tsp
  • Juice of 1 lemon
  • 1/2 tsp black pepper powder
  • Ground cumin 1/2 tsp
  • Curd 1 tablespoon (drained)
  • Onion finely chopped 4
  • Green chillies 2 to 3 finely chopped
  • Green coriander 1/2 cup (finely chopped)
  • Mint 1/2 cup (finely chopped)
  • Samosa Patti
  • Oil

For the slurry –

  • 1 tsp all purpose flour
  • 2 teaspoons water
