Chole Puri
Most of the people like to eat Chole Puri for breakfast. However, this dish can be eaten any time of the day. It is very tasty to eat. Like Chole Bhature, it is also spicy. It contains potatoes and spices along with chickpeas. Hot and puffed puris are added to enhance the taste.
Let’s see the recipe for making Chole Puri –
Soak the chickpeas overnight. Add soaked chickpeas, salt and water in the cooker and close the lid. When one whistle comes, reduce the flame of the gas. Let it cook on low flame for 15 to 20 minutes. When the gas goes out, open the cooker and check. Chickpeas become good only when they are cooked well, boil the potatoes separately and grind the chickpeas into small pieces.
When the oil is hot in the pan, add bay leaves, cumin, asafoetida, cloves, black pepper, make a paste (tomato, green chilli, ginger), then add salt, black salt, turmeric, red chilli powder. Add coriander powder, chickpea masala and half a cup of water and fry well. Put the leaves in a cup of water and boil separately for 2 to 3 minutes. After boiling, filter the water from the leaves and add it to the masala. The color is very good to look at and the chickpeas taste good.
Once the spices are roasted, add the boiled chickpeas and boiled potatoes. Add the remaining water of the chickpeas (if there is no water in the chickpeas, add plain water). Break some chickpeas and potatoes with a spoon and mix them. By doing this, the chickpeas become thick on top. Add garam masala powder and green coriander.
To make Puri –
Mix semolina, salt, turmeric, red chilli powder, garam masala, kasoori fenugreek, celery, ghee in the flour and knead a soft dough with little water, leave it for half an hour.
Make round balls of the dough and make them into small balls; whole ones are of small size and Bhature are big.
Now roll it with light hands. When the oil is hot, break a little dough and put it in the oil to see if it is hot or not. Now put the puris in the oil one by one and turn them from both the sides and take them out.
Puffed Puri is ready
Chole Puri Ingredients –
For chickpeas –
- Chickpeas – 1 cup
- Potato – 2 potatoes
- black pepper 4 to 5
- cloves 2 to 3
- bay leaf one
- cumin 1/2 tsp
- Paste (2 tomatoes, 1 inch ginger, 2 green chillies)
- a pinch of asafoetida
- Turmeric powder 1/2 tsp
- Red chilli powder 1/2 tsp
- Chole masala 1 tbsp
- coriander powder 2 tsp
- salt as per taste
- art salt as per taste
- Garam masala 1 tsp
- Leaves 2 teaspoons (make water from leaves and add)
- green coriander
For Puri –
- Wheat flour 2 cups
- Semolina 1/2 cup
- salt as per taste
- 2 pinch turmeric
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala
- 1/4 tsp celery
- 2 tbsp kasuri methi
- one tablespoon ghee or oil
- oil for frying
