Masala baigan

Let’s see the recipe for making Masala Baigan –
Lightly roast raw peanuts on a griddle, grind green chillies, onions and tomatoes and make a paste by adding salt and red chilli powder to the same paste. Mix turmeric, dry mango powder, coriander powder and ginger garlic paste.
When the oil is hot in a pan, fry one onion, add cumin and spices and fry it well, turn off the gas, when it cools down, add green coriander.
Wash the brinjal thoroughly and make two cuts from the middle. If the brinjal is large, remove some part (seeds) from the middle and take smaller brinjals. Now fill the masala in the middle.
Put the brinjals one by one in the cooker, add oil , the remaining spices and a little water, whistle for two, add very little water so that the brinjals do not burn.
Masala Baigan Ingredient-
- Brinjal 500 grams
- Peanuts 3 tsp
- Green chili 4 to 5
- Onion 1 small (paste)
- 1 small onion (fry)
- Cumin 1 tsp
- Tomato 2 Normal
- Coriander powder 2 tsp
- Red chili powder 1 tsp
- Amchur powder one teaspoon
- Turmeric 1/2 tsp
- Ginger garlic paste 1 , 1/2 tsp
- Oil
- salt to taste
