Finely chop the carrots, cabbage, onion, and capsicum. Squeeze out any excess water from the vegetables. Since the water in the vegetables causes the dough to be thin, separate the water and combine the vegetables, salt, and soy sauce with the flour. Stir in oil, ginger-garlic paste, and chilli sauce. Knead the dough after adding vegetable water as needed.
After covering the dough for a while, form the paratha into the desired shape—round, triangular, or square—and place it in the heated pan. Coat the paratha with a little oil or ghee and cook it on both sides.
If you want, you can make more of these parathas and store them in frozen. You cannot cook these parathas lightly without oil and ghee on the pan. When it cools down, place butter paper in the middle of the paratha, keep it in a zip lock bag and freeze it. Whenever you feel like taking it out, apply oil and ghee and cook it from both the sides.
