Zarda is indeed a great option for desserts during home gatherings or special occasions. It has its own unique appeal, and some people even prefer having it before their meal rather than after.

Let’s see how to make Zarda:

Wash the rice and soak it in water for 1 hour. In a bowl, take water and rice and bring it to a boil. Keep the water level slightly above the rice. Once the rice is parboiled, strain the water and cover the rice. Let it steam for 5-7 minutes.

In a bowl, take desi ghee and add sugar. Add a cup of water and continuously stir until the sugar dissolves completely.

Now, add the parboiled rice to the mixture and cook on low heat until the water evaporates. Once the sugar syrup dries up, add khoya (milk solids) on top.

Add your choice of dry fruits and food coloring to the rice. Cover and let it cook on low heat for 8-10 minutes.

 

Zarda Ingredients:

  • 500g basmati rice
  • 500g sugar or as per taste
  • ¼ tsp salt
  • 200g khoya (milk solids)
  • 2 tbsp desi ghee or oil
  • Dried fruits
  • ½ tsp food coloring
