Put oil, cloves, black pepper, cardamom, big cardamom in the cooker. After a few seconds add the spices. Mix curd, salt, turmeric, coriander powder, Kashmiri red chilli powder, red chilli powder, ginger garlic paste, cumin powder well and put it in the cooker.

 

 

 

Add mutton and half a cup of water and let it whistle 3 to 4 times. When the oil is heated in a pan, make onion birista (fry till it becomes light brown), take it out from the oil and grind it. Grind cashew nuts as well and mix it with the ground onions. Add ground coconut as well and mix all three.

 

 

 

Open the cooker and add the fried onion paste and fry it. Once it is fried, crush the mace with hand and add it. Make phulka powder and add that too. Add kewda and green coriander and serve.

  • Mutton 1kg
  • Cloves 8 to 10
  • Black pepper 12 to 15
  • Cardamom 7 to 8
  • Big cardamom 1
  • Cinnamon stick 1 inch piece
  • Red chilli powder 1 tsp
  • Kashmiri red chilli powder 1 tsp
  • Salt to taste
  • Coriander powder 5 tsp
  • Turmeric 1/2 tsp
  • Cumin powder 1 tsp
  • Ginger garlic paste 3 tsp
  • Curd 400 grams
  • Birista (fried onions) 6 normal size
  • Cashews 10 to 12
  • Ground coconut 2 tsp
  • a pinch of nutmeg
  • Mace 1/2 full
  • Kewda 2 tsp
  • Oil
  • green coriander
