Anguri Ras Malai
Anguri Ras Malai is a very tasty sweet dish which is exactly like Ras Malai which we can make at home.
Let’s see the recipe of Anguri Ras Malai –
Put the milk on the gas and add vinegar or lemon juice and stir it with a spoon. When the milk curdles, filter the water through a sieve or put it in a light colored thin cloth and squeeze it. Drain all the water thoroughly.
In a big plate, mash it well with your palms for 10 to 12 minutes until it becomes soft and uniform. Add one spoon of corn flour and mix it well.
Now make small balls. Put sugar in water in a big bowl and make syrup. Keep the flame of the gas on full. When it boils, add the balls one by one. Let it cook on full flame for 8 to 10 minutes. Now cover it with a lid and cook for 8 to 9 minutes. Turn off the gas and let it cool down.
In another bowl, when the milk starts boiling, reduce the flame of the gas and add sugar, cardamom powder, food colour or saffron to it. After cooking for 10 to 12 minutes, add dry fruits and turn off the gas. Take out balls from the syrup, squeeze the syrup lightly with your hand and put it in the milk, garnish it with dry fruits . After it cools down, keep it in the fridge for 1 hour .
Ingredients of Anguri Ras Malai –
- Chhena (Add 2 tsp vinegar to 1 kg milk and curdle the milk to make chenna)
- Make syrup by adding 1.5 cups of sugar in 1 to 1.5 litres of water (5 to 6 cups).
To make rabri-
- One litre milk
- Sugar 1/2 cup
- Food colour 3 to 4 drops or saffron
- Small cardamom powder 1/4 tsp
- dry fruit
