Dum Ka Keema

Dum Ka Keema is a very tasty and easy dish. Fried onions are added to it, curd and some ground whole spices are added which makes it different and tasty as compared to mince and keema. For the smoky flavour, smoke from burning coal is given to it.

Grind roasted gram, dry red chilli, sugar, cloves, cumin seeds, small cardamom and black pepper in a mixer grinder .

 

 

 

Wash the minced meat and drain the water in a sieve, chop the onion finely and make it brown (birista) and add it to the minced meat, add curd, salt, Kashmiri red chilli powder, ginger garlic paste and the powder ground in the mixer grinder to the minced meat, mix it well and keep it in the fridge for 1 to 2 hours (if you have less time then make it like this).

 

 

 

Fry the marinated mince in the same oil in which you fried (browned) the onions. Do not add water. Fry the curd and minced meat in the same oil that releases its water. After frying for 10 to 15 minutes, add 1 cup water and mint, stir well and cover and let it cook for 20 to 25 minutes, keep stirring at times.

 

 

 

Once the mincemeat is melted, add long chopped green chillies and green coriander, place a foil paper or a steel bowl in the mincemeat and place the burning coal in it, pour a few drops of ghee or oil on top, cover the mincemeat with a lid, keep the lid covered for 5 to 7 minutes so that the smoky flavour comes into the mincemeat.

  • Minced meat 500 gms
  • Curd 200 gms
  • Onion 3 (golden fried )
  • Kashmiri red chilli powder 1 tsp
  • Salt to taste
  • Ginger garlic paste 2 tsp
  • Roasted chickpeas 2 tbsp
  • Dried red chillies 4 to 5
  • Black pepper 1/2 tsp
  • Cloves 5 to 6
  • Small cardamom 3
  • Cinnamon stick 1/2 inch piece
  • Cumin seeds 1 tsp
  • Mint leaves 1/4 cup
  • Green chillies 3 to 4
  • green coriander
  • Oil
