When the oil in the pan is hot, add finely chopped onion and stir till it turns light brown (do not make the onion dark). When it turns light brown, take it out of the oil and keep it in the fridge for 10 minutes . After taking it out from the fridge, crush it with your hands.
Put fenugreek seeds in the same oil in which onions were fried and stir for 1 to 2 minutes. Now add curd and keep stirring the curd on low flame .
Make a paste by adding salt, ginger garlic paste, red chili powder and coriander powder with some water in a bowl. When the curd becomes grainy and the color starts changing a little, add the spice paste and let it fry for 10 to 12 minutes.
Now add kasuri methi and fried onion (crushed) and fry it well. Once the masala grains are cooked, add one tablespoon water and the cleaned and washed fish and keep it on low flame for 10 minutes.
Do not stir the fish. Cover the pan and shake it by holding it with a cloth. By doing this the fish will not break. Add green coriander before serving.
