 We have brought market-like Kachori Recipe for you.  Kachori is in great demand as a street food. It is very difficult to make market-like Kachori at home, but with this recipe of ours, you can easily make it at home, for evening tea. Time: Eating hot Kachori is its own pleasure, with it the potato vegetable doubles the taste. We will make this recipe with wheat flour and semolina.

In this recipe of Kachori, adding semolina makes it crispy and adding soda to the masala makes it fluffy.

Add semolina, salt, celery and oil to the flour and mash it. When all the flour becomes uniform then add water little by little and knead it. Do not knead the dough too thin or too tight. After kneading, keep it covered for some time. Make a round shape of the dough. Make dough.

 

 

 

Finely chop the onion (chop the onion), finely chop the ginger, garlic and green chillies. In a pan add coarse coriander, cumin, black pepper, dry red chilli and fennel and roast all these spices on low flame. Once it cools down, add it to the mixer. Grind it coarsely in a grinder. Roast the gram flour on low flame in the same pan. Turn off the gas once the gram flour smells.

 

 

 

Take one spoon of oil in a pan , add nigella seeds and asafoetida, after that add chopped ginger and garlic and brown it lightly, add 2 spoons of coarsely ground masala, fry on low flame for 25 to 30 seconds, add chopped onion and green chillies and stir well. Finally add roasted gram flour and a pinch of baking soda, mix and fry for some time.

 

 

 

Make round balls of masala, roll the ball of dough like a roti with your palm, place the ball of masala inside it and make it round.

 

 

 

Now shape it like a kachori with the palms of your hands.

 

 

 

When normal oil is heated in the pan , put the Kachoris one by one and brown them from both the sides on normal flame.

Potato Chutney –

 

 

 

Soak the tamarind in water for half an hour. When the tamarind swells, take out the seeds and grind the tamarind and jaggery in the mixer. Boil 2 potatoes, peel them, break them with hands and add them to the paste of tamarind and jaggery. Kashmiri red chilli powder, black. Add salt, chaat masala, long chopped green chillies, roasted coarse masala, finely chopped coriander, add some water and mix.

 

 

 

By eating this chutney with Kachori, the taste gets doubled. You can keep it as thin or thick as per your wish.

Kachori Recipe Ingredients –

Flour –

  • flour 250 grams
  • Semolina 100 grams
  • Ajwain 1/2 tsp
  • salt as per taste
  • Oil 4 tsp

Spices –

  • coarse coriander 2 tsp
  • Dry red chilli 3 to 4
  • black pepper 7 to 8
  • cumin 1 tsp
  • Fennel 1 tsp
  • cardamom 3
  • Gram flour 4 teaspoons (roasted)
  • Onion 2 (finely chopped)
  • 3 to 4 cloves of garlic (finely chopped)
  • Ginger 1/2 inch (finely chopped)
  • Green chilli 2 (finely chopped)
  • Nigella seeds 1/2 tsp
  • Hing 1/4 tsp
  • salt as per taste
  • turmeric 1/4 tsp
  • Dry mango powder 1/2 tsp
  • sugar 1/2 tsp
  • pinch of baking soda
  • green coriander

sauce –

  • potatoes 2 small
  • Tamarind and jaggery 4 tsp (paste)
  • salt as per taste
  • Coarse masala 2 teaspoons (roasted and ground in mixer)
  • Kashmiri red chilli 1/2 tsp
  • Chaat fruit masala 1/2 tsp
  • Green chilli 2 cut lengthwise
  • green coriander finely chopped
