Mutton Chap Fry
Mutton Chap Fry is a famous Mughlai recipe known for its delicious taste. Once you taste it, you’ll crave it again and again. In this recipe, mutton chops are boiled and then deep-fried with yogurt and spices. It is enjoyed with chutney and onions.
Let’s take a look at the recipe for Mutton Chap Fry:
Clean and wash the mutton chops. In a pressure cooker, add the mutton chops, ginger-garlic paste, onion, salt, and a little water. Close the pressure cooker and cook for 3 whistles.
Once the pressure is released from the cooker, check if there is any water left. If there is, cook on high heat until the water evaporates completely. Be careful not to use too many stirring spoons as the chops may break. In a separate bowl, make a paste by mixing corn flour, roasted gram flour, yogurt, lemon juice, chopped coriander leaves, salt (be cautious as salt has been added earlier), food color, red chili powder, roasted cumin powder, chaat masala, crushed red chilies (chili flakes), and red chili powder.
Heat oil in a kadhai (wok) to medium heat. Coat each mutton chop well with the spice mixture and fry them in the oil one by one. After frying on one side, flip them and fry from the other side as well. Once both sides are fried, remove them from the oil.
Serve the Mutton Chap Fry with chutney and onions.
Mutton Chap Fry Ingredients:
- 500 grams mutton chops
- 1 small onion
- Salt to taste
- 1/2 teaspoon turmeric powder
- 2 teaspoons ginger-garlic paste
- 100 grams yogurt
- 3 teaspoons corn flour or rice flour
- 1 1/2 teaspoons roasted gram flour
- Juice of 1 lemon
- 1/4 teaspoon food color
- 2 teaspoons chopped coriander leaves
- 1 teaspoon chaat masala
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon crushed red chilies (chili flakes)
- 1 teaspoon red chili powder
- Oil for frying
