Mutton Raan Roast

Mutton Raan Roast is a mouth-watering recipe. It was included in the dishes of kings and great kings. They used to eat it with great fondness. Even today there is no dearth of people who like it. It is often made on Bakra Eid. It is marinated by mixing various spices and then it is melted and roasted.

 

Let’s see Mutton Raan Roast-

 

 

 

Wash the mutton thigh and make cuts at a distance of one inch, do not make cuts on the joint of the thigh, so that the bone of the thigh gets bent and comes into the cooker or pan. Prepare the masala for marination. In a bowl, put cashew powder or (paste), turmeric, red chilli powder, cumin powder, black pepper powder, salt, Kachri powder or (ground papaya), coriander powder, garam masala powder, food colour, gram flour, ginger garlic paste, green chilli paste, lemon juice, curd, oil and one egg and mix it well.

 

 

 

Apply this spice paste nicely on the mutton loin, also apply it on the cut part with your fingers so that the masala reaches inside. Now cover the marinated loin and keep it in the fridge for one night, if you don’t have much time then keep it for 2 to 3 hours. Now put the loin and half a cup of water in the cooker and cook for 5 to 6 whistles (till it melts).

If you do not have a big cooker then put the loin and water in the pan and let it cook on a low flame for half an hour. After half an hour, turn it to the other side. If required, add water and let it cook on a low flame. Keep changing sides like this till the loin is melted. Once the loin is melted, drain the water and fry the remaining masala.

 

 

 

Roast it in a non-stick pan or kadhai after putting oil in it. Once it is nicely browned, turn it over and let the other side also get brown. Take out the Raan in a plate and pour melted butter over it. Take out the remaining roasted masala in a small bowl and serve it garnished with green coriander.

Make chutney along with it, it will double the taste

 

 

 

Add green coriander, salt, ginger, cashew nuts, green chillies, cumin seeds, lemon juice and water as per requirement and make a paste in the mixer grinder.

  • Mutton Loin – 2 kg
  • Cashew powder or paste 1/2 cup
  • Salt to taste
  • Red chilli powder 1 tsp
  • Turmeric 1/2 tsp
  • Coriander powder 2 tsp
  • Cumin powder 2 tsp
  • Black pepper powder 1 tsp
  • Garam masala powder 2 tsp
  • Ginger garlic paste 2 tablespoon
  • Kachri powder or ground papaya 1/4 cup
  • Gram flour 2 tablespoon
  • Food colour 1/4 tsp
  • Green chilli paste 1/4 cup
  • Curd 1/2 cup
  • Oil 1/4 cup
  • Egg 1
  • Lemon 3 tablespoons
  • Butter 100 grams

sauce –

  • Green coriander 1/2 cup
  • Cashews 8 to 10
  • Cumin seeds 1/2 tsp
  • Green chillies 4 to 5 (thick)
  • Salt to taste
  • Lemon 1/2
  • one inch ginger
