Special Mutton Curry is a very tasty dish. In it onions are fried and gravy is made in two ways and dry and whole spices are also added, which enhances its taste a lot.

Clean the mutton, wash it thoroughly and put it in the cooker . Grind onion, green coriander with stalks, green chillies (thick ones), ginger, garlic in a mixer grinder and put it in the cooker along with the mutton.

 

 

 

Also add oil and some whole spices like cumin, cardamom, cloves, black pepper and big cardamom, add red chilli powder, Kashmiri red chilli powder (optional), salt, turmeric, mix it and let it cook for 8 to 10 minutes.

 

 

 

Fry the onions lightly brown in a separate pan (do not make it too dark). After it cools down, grind the fried onions, curd, coriander powder, cumin powder, fennel, coconut powder and saute powder (ginger powder) in a mixer grinder.

 

 

 

Add this mixture to the mutton and mix it well. Lightly roast the Kasuri Methi on the pan and add it. Add half a cup of water, close the lid of the cooker and let it whistle for 3 to 4 times (till the mutton melts). After the gas of the gas cooker comes out, add Garam Masala powder and Kewda.

Add green coriander before serving.

  • Mutton 1kg
  • Onion 4
  • Half cup green coriander leaves with stalks
  • Green chillies 8 to 10
  • Ginger 2 inch
  • 1 bunch garlic whole
  • Cloves 6 to 8
  • Cardamom 4 to 5
  • Black pepper 10 to 12
  • Big cardamom 1
  • Onion Fry 2 ( Birista )
  • Curd 400 grams
  • Coriander powder 2 tbsp
  • Kashmiri red chilli powder (optional) 1 tablespoon
  • Red chilli powder 1 tsp
  • Salt to taste
  • Turmeric 1/2 tsp
  • Cumin powder 1 tsp
  • Fennel 1 tsp
  • Coconut powder 2 tsp
  • Saute powder (ginger powder) 1/2 tsp
  • Kasuri methi 1 tablespoon
  • Garam masala 1 tsp
  • Kewda water 2 tsp
  • Oil
