Wash the mutton chop thoroughly and put onion, salt, ginger, garlic paste and half a cup of water in the cooker and let it whistle for 3 to 4 times or until it melts. After the gas comes out, open the cooker and dry the water on full flame.

 

 

 

Make a paste of green chillies, coriander and ginger and put it in a bowl. Add corn flour, gram flour, rice flour, coriander (lightly fry the coriander and grind it coarsely), black pepper powder, garam masala powder, red chilli powder, roasted cumin powder, chaat fruit powder, lemon, thick curd, food colour and salt (salt is also added at the time of boiling the chaap, so use less of it). Now add water to all these spices and make a paste.

 

 

 

Coat all the chops with the paste. When the oil is heated on medium flame, add the chops one by one. Take them out when they turn light brown from both the sides.

 

 

 

To make Chap Fry more tasty, eat it with this chutney; grind green coriander, salt, green chillies (thick ones), cashew nuts, ginger, cumin seeds and squeeze lemon; once ground, add curd and mix.

Ingredient-

  • Pressure 1 kg
  • Onion 1 big 
  • Ginger garlic paste 1 tablespoon
  • Salt to taste
  • Roasted crushed coriander 1 tablespoon
  • Garam masala powder 1/2 tsp 
  • Corn flour 3 tablespoons 
  • Gram flour 1 tablespoon 
  • Rice flour 1 tablespoon 
  • Chaat fruit masala 1 tsp 
  •  Roasted crushed cumin 1 tablespoon
  • Donkey curd 2 tbsp 
  • Red chilli powder 1 tablespoon
  • Black pepper powder 1 tsp
  • Lemon 1
  • Orange food colour 1/4 tsp 
  • Oil 

Green chili paste 

  • Green chillies 3 (thick)
  • Green coriander 1/4 cup 
  • Ginger 1 inch 

sauce –

  • Green chillies 4 to 5 
  • Handful of green coriander 
  • half a lemon 
  • Cashews 6 to 7 
  • Ginger 1/2 inch 
  • Salt to taste 
  • Cumin seeds 1/2 tsp
  • curd 2 tabalspoon
